Tomato Factory

24 July 2015

Our friend Raffaele works at the 50-year old Strianese tomato factory in Striano, close to Napoli. Raffaele organised an highly interesting tour for us through the production site. A great experience for us!

They use only the best quality tomatoes. Before canning the tomato sauce or cherry tomatoes they sort the tomatoes 6 times (!) : first 2 automated steps and then another 4 manual sorting steps.

Anna, in the picture below, works in the tomato factory for more than 30 years. Not many people can do this work for such a long time, since the work conditions are very intense: up to 40°C and very humid due to the cooked tomatoes.

The cherry tomatoes are filled in cans as whole tomatoes with skin and then covered in tomato sauce.

The larger tomatoes are de-skinned and used for sugo (tomato sauce) or as chopped tomatoes.

At the end the cans are pasteurised, meaning they are heated with steam for more than 1 hour .

The tomatoes/tomato sauce supply for an entire year is produced in only 2 months during the summer season when the tomatoes are mature. In these two months 150 people work at the Strianese factory, whereas only 15 employees work off-season.

The Strianese cans are distributed and sold all over the world (e.g. Japan, USA, Australia, Europe).
